I recently took a gorgeous Manzo Piedmontese brisket through a 48-hour brine, then coated it with Traeger’s Whiskey Rub. I then smoked it low and slow for 24 hours at 185°F, then gave it a hard, final sear at 475°F.

Finally, I pulled it when the internal temp reached 190°F, tucked it into a cooler for 45 minutes, and then…

…magic.

The flavor was rich, deep, and savory (without being overly fatty), while the texture was tender enough to cut with a fork but still structured enough to hold that perfect smoke ring.

Here’s why this cut is on a different level:

✔️ Double-muscle genetics: Piedmontese beef comes from a rare Italian breed known for having more muscle fibers but less connective tissue. This means leaner beef that’s naturally more tender—no need for heavy marbling to keep it juicy.

✔️ Nutrient dense: Piedmontese beef offers higher protein per ounce compared to conventional beef, and it’s lower in cholesterol and saturated fat, making it both performance-friendly and heart-smart.
